Miss me? I miss yall! Your resident baker is back just in time for the holidays!

So everybody knows I like to play around in the kitchen… try new things. I have a million baking-heavy cookbooks, I’ve created a few of my own baked recipes and I’ve even had some passed down to me. This recipe, however comes from and I personally plan go IN on these this weekend!!

To the kitchen…


1 1/2 cups (165g.) all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. nutmeg
1/8th tsp. cinnamon
1 cup eggnog
1/4 cup rum, or other liquor
1 tsp. vanilla extract
1/4 cup butter, softened
1 cup granulated sugar
1 egg

Nutmeg Buttercream Icing

1/2 cup eggnog
2 TBSP all-purpose flour
1/2 cup (1 stick) unsalted butter, softened
1/4 cup plus 1 TBSP granulated sugar
1/4 cup heavy whipping cream
1/4 tsp. nutmeg, plus more for garnish
1-2 TBSP rum, or other liquor, to taste (optional)
1 tsp. vanilla extract

Preheat oven to 350f., and line your cupcake tray with liners. Whisk together flour, baking powder, baking soda, spices, and salt. Set aside. In a separate bowl, combine eggnog, rum, and vanilla extract. Set aside.

With an electric mixer, beat together the butter, sugar, and egg until lightened, about 2-3 minutes. Turn the mixer to low speed, and add 1/2 the eggnog mixture, mixing to combine, followed by 1/2 of the flour mixture. Repeat with the last of the eggnog and last of the dry ingredients, mixing until the flour is just barely incorporated , do not over-mix!

Spoon into prepared cupcake pan, filling each liner about 2/3rds of the way full. Bake on the center rack for 18-20 minutes, or until the tops are golden brown and springy to the touch.
Cool in tray for 4-5 minutes before transferring to a wire rack. Let cool completely before frosting.
