Hi M’loves! We’re a few weeks away from a day from a foodie’s favorite holiday: Thanksgiving! For some this means spending quality time with family and reflecting on all that makes one grateful. It also means plenty of “oohs” “ahhs” and “…..umms” from social media posts of the best (and worst!) dishes you’ve also seen. Your Resident SoPhi Baker is back and if you follow my lead these next few weeks you’ll be safe from the slander… ready?
To the kitchen…
3 1/4 cups flour
½ cup shortening
4 teaspoons baking powder
2 cups sweet potatoes
½ cup sugar
Wash sweet potatoes, then slice and boil them until tender (approx 45-60 mins). Cool potatoes, then peel. Pre-heat oven to 375. Mix sweet potatoes and sugar until blended. Add flour, baking powder and shortening, knead well until blended. For more moisture, add a few drops of water or milk. Shape the mixture into biscuits. Bake 15-20 minutes. Best served hot. (SN: Your house will smell amazing!!)
Feel free to drizzle some honee butter or add some cinnamon to this recipe. There’s a million things you can do with a sweet potato, think outside the pie!
