This is one of my favorite recipes to make !! I use these ingredients and the standard recipe but I interchange them all the time depending on how I feel and who its for !

Preheat oven at 350º

Cumin Dusted Seared Chicken Breast with Eggplant, Mushroom and Okra Ragout

Ingredients:
Boneless Skin-less Chicken Breast 4 pieces
Fresh Ground Cumin
White Himalayan Salt
Fresh Ground Black Pepper

Eggplant, Shiitake Mushroom, Cherry Tomatoe and Okra Ragout
Eggplant 1 whole cut into bite size pieces
Shiitake Mushroom 1 pound ( remove stems ) sliced
Cherry Tomatoe 1/2 pound cut in half
Okra 1/2 pound cut on a bias
Garlic 2 whole cloves chopped
Red Onion 1 whole thinly sliced
Chicken Stock 2 cups
Coconut Oil
Tyme 3 sprigs
White Himalayan Salt
Ground Black Pepper
Fresh Ground Cumin

Season chicken breast with salt, black pepper and cumin
Place a 10in frying pan with high sides on the range over medium heat
Add enough coconut oil to coat the pan, once the pan starts to shimmer and the oil is hot, place seasoned side down first of chicken breast in the pan and let cook until browned on the first side, once you flip them over place the pan with chicken in oven to finish cooking through, juices will run clear if pieced.

When chicken is finished take them out of the pan and place on a plate and sit to the side. If there is any pan juices, place along side chicken in an container. ( to be added later )

The pan should still be hot, place back on top of range over medium heat. In the same pan that the chicken was in, place the cut orka in, let cook until crisp but not mushy !! ( if pan is dry add alittle coconut oil) Remove orka from the pan and set to the side. add cut eggplant, sliced mushrooms and red onion sautee until vegetables and carmelized on all sides. (Season with salt,pepper and cumin) At this point add garlic and reintroduce okra back to the pan. Continue cooking until the sent of garlic starts to fill the air. The last steps are to add tomatoes and chicken stock plus any pan juices cook until tomatoes are warmed through and chicken stock had reduced by half.
Taste to adjust seasoning. It should look thick and delightful.

**Ragout (French ) means “revive the taste “.. Its a method of slow cooking a dish with or without meat, accompanied with a variety of vegetables.

**You can change the kind of mushroom, I just like those better makes it alittle more earthy.

**Cumin is An aromatic spice with a distinctive bitter flavor and strong, warm aroma due to its abundant oil content. Cumin “seeds” are actually the small dried fruit of an annual plant in the parsley family. Native to the Mediterranean, cumin is hotter to the taste, lighter in color, and larger than caraway, another spice it’s sometimes confused with. Sold whole or ground, the seeds come in three colors: amber, white or black. Cumin is a popular ingredient in Middle Eastern, Asian, Mediterranean and Mexican cooking.
